One title that is really noted for using up both Graphics power and a lot of processing power is Crytek's Farcry. This was the first games title that I really noticed a major difference, everything was super smooth even in ultra mode at 1280x1024 on the 3800 and this was on the slower ATI X800 Pro instead of an XT model. Farcry uses both the graphics card and the processor (more work on the processing than in Doom 3) to the best of their abilities, so it was good to see the 3800 moving away with much better frame rates over the 3000 processor.
