There is a patch at mess.be that will add a check box to the tab options to turn them off. Microsoft says that the final release of Messenger 7.0 will include the option to turn them off.

The patch at mess.be didn't allow me to choose which tab, only disable all :(

Right click on the tab, go to "tab options", select what tabs you want active.
